Individual orange butter cakes - 10/01/09

Fall is around the corner, the weather is definitely changing!  Mornings are brisk and you can feel the cold air coming.... At the market the summer fruits are gone and replacing them are oranges, apples, pears, etc....  Gone are the vibrant colors of summer but Fall is also so beautiful when the leaves are starting to change color.  while at the market,  I bought a bunch of oranges and I used most of them in my salad but I wanted to make something sweet with oranges and the result is an orange butter cake. 

A cup of coffee, a warm orange butter cake topped with a scoop of ice cream is all I need to cozy up in front of the TV.

 

These little cakes are so moist and the combination of brown sugar, orange segments, and butter gave the cakes a really good flavor.

Instead of Ice cream, these cakes are also very good with a crème Anglaise.

Preparation work..

Brown sugar and melted butter are poured in ramekins.

Arranging orange segments on top of the brown sugar and melted butter and then ramekins are set aside.

Butter and sugar are mixed together until will combined

Next, an egg is added and mixed well until the mixture is pale.

Here I am adding four to the mixture and the whole thing is mixed until the batter is fluffly

Here I am adding the batter inside the ramekins filled with orange segments.

The ramekins are ready to go in the oven for about 20 minutes.

Freshly out of the oven...
