Slow Roasted Pork Shoulder- 1/24/09

 

Winter is here and there is nothing better than to indulge with some home made food that is simply prepared and that can warm up the soul.

Today I choose to make a Slow roasted Pork Shoulder that is so tender that it should fall off the bone.  It takes about 3 hours to roast it and in the mean time the house smell wonderfully good that it is almost a torture to wait this long in order to be able to eat the roasted pork.

The meat is absolutely tender and the rosemary and the sage really enhanced the taste to the roast.

 

The roasted Pork is so delicious with some mashed potatoes, rice, spaghetti or just warm bread.

 

Preparation work..

Here I am toasting the fennel seeds until it is fragrant.

Garlic, fresh Rosemary, fresh sage leaves, and toasted fennel seeds are combined and then pulsed to combine.

When all the ingredients are chopped, oil is added to form a paste.

The Pork shoulder are cleaned and then put inside a tray.

The meat is then rubbed with the herb mixture and then it will let to rest overnight in the refrigerator.

Now that it has been marinated overnight the meat is left to stand at room temperature for 30 minutes before going into the oven.

3 hours later.... the roasted pork in ready! I usually let the meat stand for 15 minutes before slicing it.
