Pineapple Upside-Down Cornmeal Cake- 1/31/09

 

Super Bowl Sunday is a big day for all the fans of football.  Millions of Americans are tuned in to watch the last game of the season. Of course we want to be part of the big day too so the group is getting together at Phuong's and Dung for Pot Luck party.  Actually, I am more excited for the food than to watch a football game but never the less it is a nice occasion to get together.  For my part I am making a Nem Tha Dua dish, a chocolate trio mousse, and a Pineapple upside down cornmeal cake.

 

This is definitely an American dessert!  I saw Alton Brown making this dessert and I always wanted to try it out because it looks really appealing.

There is something about the caramelized Pineapple that really attracts me!

Preparation work..

The corn meal is soaked in milk for about 30 minutes.

Here I am melting the butter and then brown sugar is added and cooked for about 2 minutes or so.

Here I am pouring the butter/Brown sugar mixture to a pan

Placing the slices of Pineapple in circular pattern.

Toasting the walnut until fragrant.

Next, the nuts are sprinkle evenly

Beating the eggs and  sugar to combine and then oil is added.

Then the cornmeal is added to the batter.

Finally, flour and baking powder are added and whisked to combine.

The batter is then poured into the pan.

The whole pan is going into the oven for 40/45 minutes or so....

Freshly out of the oven and will be put aside so the cake will cool down before I can turn it upside down.
