Nectarine cakes - 8/7/09

 

The cakes turned to be so beautiful to look at and on top of that they are so good freshly out of the oven.  You can make this cake with any type of fruits you have on hands.  I just happened to have a few nectarines so I used them.  Hoa had a few of these cakes and then he said these cakes are so good so don't give them out, save them for me so I can eat them for Breakfast!  

 

 I sprinkled a bit o powdered sugar of top of the cakes but you can definitely serve them without the sugar on top.

Preparation work.

Mixing the butter at room temperature and sugar in a bowl

Mixing butter and sugar until lighter and fluffy, about 3 to 4 minutes.

Adding a total of 2 eggs to the batter but one egg is incorporated at the time until well mixed than the 2nd egg is added.

 

Adding 1/3 of the flour to the batter

Once the flour is well mixed, milk is added.

Then the remaining flour is added to the batter.  Once it is well incorporated it is put aside.

Slicing the nectarines into thick slices.

Here the molds are buttered and sprinkled with flour 

I am using 2 kinds of molds - heart molds and square molds.

The molds are filled up to 2/3 and then nectarines slices are put on top of the batter.

They are ready to go in the oven for about 30 minutes.
