Double Chocolate Financiers - 10/25/08

 

I love Financiers and I made them regularly but this time I wanted to try something a little different and decided to enhance the flavor by adding chocolate. For this recipe I combined cocoa powder in the dough and then added some chocolate chips for a more intense chocolate taste result.

Financiers are soft little almond cake and they are great as a snack.  They are baked in a special square mold to resemble a gold bar, hence the name Financier

 

The chocolate Financiers turned to be very good.  There is honey in this recipe and I could really taste it!  For an even more intense taste of chocolate, I drizzled some warm chocolate sauce on top of the cake and let me tell you it was so good.

Preparation work..

Ingredients: sugar, cocoa powder, egg white, and flour are mixed together

Mixing the ingredients together until well blended and then put aside.

Melting the butter and honey together.

Cooking the butter until it is turning brow and smelling like hazelnut (Beurre noisette) . 

Once the butter has reached the correct consistency it is poured slowly into the chocolate batter.

The butter is well incorporated, the butter will go in the refrigerator for one day of rest.
