Fried Milk- -2/29/13

Fried milk? How can you fry milk? That is just not possible!  And that's probably the first reaction you get when you announce that you are serving fried milk for dessert!
What is fried milk?  The answer is a custard made with egg yolk, and then it gets chill for a few hours.  Next, it is breaded and then fry pieces of the custard.  If this is this confusing then just look at the pictures of how it was made.

As you bring it to the table nobody has a clue what is the inside of this piece of fried milk and that it a good piece of conversation....

The fried milk is sprinkled with powdered sugar.

Here is how the inside of the fried milk.  It is a custard with orange and lemon zest.

 

Crunchy on the outside, rich, creamy on the inside with a burst of flavor from the lemon and orange zest.

 

Preparation work..

Ingredients

Milk

4 cups whole milk

1 cup sugar

1 cup all purpose flour

finely grated zest of 2 lemons

finely grated zest of 2 oranges

6 large egg yolks

Breading

1 cup all purpose flour

3 eggs ,beaten

1 cup plain dry bread crumbs

vegetable oil for frying

1/2 cup of sugar

Combine the milk, sugar, flour together.

add the lemon and orange zest and mix it well together.

Put the pan on a medium heat and cook. 

Stirring constantly with a wooden spoon for about 5 to 10 minutes or until a thick paste forms and then continue cooking and stirring constantly for another 5 minutes.

Add the egg yolks, one at a time...

Mixing after each addition until incorporated and then continue to stir for 5 minutes longer.   Remove from the heat.

Spray the bottom of a 13x9 inch baking pan with water.  Pour the milk mixture into the pan and spread it to an even thickness of about 1/2 inch.

Cover and refrigerate for 1 hours or until cold and set.

Using a knife, cut the custard into small rectangular pieces.

Breading: Put the flour, beaten eggs, and bread crumb in separate bowls.

 

Pass the milk pieces through the flour then dip it in the beaten eggs....

then finally coat them with a layer of bread crumb.

Heat a pan with hot oil and then deep fry each piece of milk.

 

Fry about 3 to 4 minute or until golden brown.

Transfer to paper towel to drain briefly and then put them aside.   Sprinkle with powder sugar and serve hot
