Coco au Miel - (Coconut Honey cakes) - 12/07/08

 

I am in a festive mood!  The Holidays are just around the corner and tonight we are invited to Doan's and Tuan's house for a holidays cheers party so I am dressing up my cakes with red and silver paper cups, which are the perfect color for the holidays!

 The shredded coconut give the cakes a dense, chewy, delicious, and it is also adding a tropical/exotic flavor..

 

These cakes go so well with a cup of coffee/Tea and they are also delicious for breakfast!

 

Preparation work..

I am bringing the milk and honey to a boil over medium heat.

In a separate bowl shredded coconut, sugar, salt and flour are mixed and then hot milk in stirred in.

Once the mixture is well combined, eggs are added..

The mixture is then poured into a muffing pan lined with paper cups.

The Pan goes into the oven for 25 minutes until brown an golden and a toothpick inserted in the center emerges clean.
