Cherry clafouti- 6/5/10

Clafouti is a classic dessert that is delicious, comforting, and such a handy dessert to serve because there are only a few ingredients and it is so easy to make.  It works with almost any fruits and even if you do not even plan to make it you can always whip it up at the last minute. This clafouti recipe is a tender pancake batter poured over cherry but if you can't find cherry substitute it for blueberries, raspberries, or blackberries will work as well.

Preparation work..

1 cup milk

 3 large eggs

1 cup all purpose flour

1/3 cup sugar

2 cup fresh or frozen cherries

confectioner's sugar for sprinkling

Ingredients for the batter. 

In a saucepan, bring the milk to a boil, then immediately turn off the heat

Whish the eggs in a medium bowl.  Gradually whisk in the flour then the sugar and finally hot milk.  Mix thoroughly until smooth and set aside at room temperature for at least 2 hours (letting it stand makes a more tender batter)

When ready to bake, heat the oven to 325 degrees.  Stir the batter and pour into a mold.

Dot the surface evenly with the cherries. 

Bake for about 20 minutes or until puff and light golden brown.

Freshly out of the oven.  Sprinkle with confectioner's sugar and serve warm.
