Braised Chicken with shitake mushroom- 8/29/10
If you are looking for a quick chicken recipe this is it! There are only a few ingredients and all you need is less than 30 minutes and voila you have a satisfying meal in no time.
No need to transfer the chicken into a dish because I wanted a rustic presentation.

I love mushrooms so anything with mushroom is good for me. The mirin added a bit a sweetness to the dish and I enjoyed the chicken with a bowl of white rice.
Simple and quick dinner in the middle of the week.
Preparation work..
6 chicken thighs 1 onion chopped 2 gloves of garlic Shitake mushrooms 1 cup chicken broth 1/4 cup mirin 2 tablespoon on chopped green onion Salt and pepper |
Salt and pepper your chicken |
Put the chicken in a hot oiled skillet |
browned the chicken on both side and put aside. |
while the chicken is browning, clean your mushroom, chopped the onion and garlic. |
Once the chicken is browned and put aside, pour your onion and garlic in the same pan and sautéed until golden brown |
next add the mushroom and sautéed until the mushroom released their juices. |
Put the chicken back in the skillet. Pour the chicken broth and mirin inside the skillet. Lower the heat to low. Cover the skillet and let it simmer for about 15 minutes. |
After 15 minutes remove the cover and if there are still a lot of broth left, turn the heat to high and let the sauce reduce down to a thicker sauce. When you are ready so serve just sprinkle the chopped green onion on top. |
