Triple chocolate Brownies, Vanilla ice cream and salted caramel sauce- 9/11/10

I am craving for brownies but thanks goodness I don't have to make them from scratch.  I used the pre-mix from Ghirardelli and they are as good as home made.  All you need is about 20 minutes and you can bake a batch than taste like heaven.  I wanted to have multiple layers of flavor so I decided to add a scoop of vanilla ice cream and then a generous drizzle of hot salted caramel sauce.. It is good!  How can it not be good? You have for the base a gooey and rich chocolate brownie paired with vanilla ice cream, which is cold, rich and creamy. and then you have the warm caramel sauce for the final touch...Just heavenly!

Close look at the dessert!  You can use any flavor of Ice cream you want and it will be delicious!

Preparation work..

For the cake

1 package of pre-mix Ghirardelli triple chocolate brownie mix - just follow instruction

For the caramel sauce

1 1/4 cup  granulated sugar
80 ml water
1 stick salted butter at room temperature, cut into small pieces
150 ml heavy whipping cream

Eggs and sugar are combined in a large bowl.

Add water, oil and 1 egg to the mix and stir well

The mixture is beaten until thick pale and forming a ribbon.

Pour the batter into small molds or if you want to can pour into a large circular mold.  I wanted to make individual cakes so I used small mold.

Pre-heat the oven at 350 degrees

Bake the brownies for about 15 to 20 minutes.

Let them cool down and invert them into a cooler rack.

Prepare the caramel sauce.  In a heavy saucepan set over low heat, combine the sugar and water.

Cook just until the sugar is dissolved. Add the butter. Let it come to a boil. and

cook until it reaches a golden caramel color.

Remove from the heat and add the cream ( it will splatter and get crazy). Whisk to combine and put back on the stove.

Let it come to a boil again over low heat and cook 25-35 minutes until you reach a creamy consistency.

Pour into a container and reheat it in the microwave when ready to serve.
